Pretty in Pink right? This healthy recipe is for a gorgeously bright Raspberry Powder Chia Pudding. I used both raspberry powder and fresh raspberries to create this sweet, yet tart Chia Pudding.
Eat for breakfast or as a snack.
I have mentioned quite a few times that Chia Pudding is one of my favourite gluten-free snacks and breakfasts, for a few reasons. Just two tablespoons of chia seeds contain 4g of protein and they are also a good source of soluble fibre – which is very soothing to the gut.
Chia Seeds also contain iron and Omega 3’s and have a neutral taste, taking on any flavour you add to them, which means that there really isn’t any reason not to eat these versatile little seeds.
What is Raspberry Powder?
Research shows that Raspberries are rich in vitamins and antioxidants. They have a high concentration of ellagic acid too, a compound that helps lower the risk of cancer! The good news is these nutritional benefits are not lost when the berry is freeze or spray dried.
Besides these awesome nutritional benefits, the powder is beautiful and can be used as a final dusting on a dessert, or you can mix it into a smoothie for a healthy boost. You can mix it into cake batter to add colour and a burst of flavour. It is a completely natural flavouring and colouring too, with no added preservatives or additives.
What you need to make Raspberry Powder Chia Pudding
Raspberry Powder (Chayah Foods) Chia seeds, almond milk, maple syrup and fresh raspberries.
I topped my chia pudding with coconut yoghurt, but if you are vegan, you can omit this or use a dairy-free yoghurt.
Raspberry Powder Chia Pudding
Ingredients
- 3/4 cup unsweetened almond milk
- 10 fresh raspberries
- 1 tsp raspberry powder plus more for dusting
- 3 tablespoons chia seeds
- 1 tbsp. maple syrup
- 1 tbsp. coconut yoghurt
Instructions
- Wash the raspberries and using a fork, mash them into the almond milk. Then add your raspberry powder.
- Fill the raspberry milk mixture in a glass and add the chia seeds. Give it a good mix and set it aside in the fridge overnight
- Top with coconut yoghurt if you would like, plus more raspberries.
