{Vegan, Dairy Free} My Mini Oreo Cheesecake

Today’s recipe is my Mini Oreo Cheescake that’s Vegan and Dairy Free. When someone says Cheesecake, Cashews don’t usually spring to mind as a core ingredient. However the cashew nut has long been used to create dairy free desserts, because of the fact that when it is soaked and blended it creates a silken kind of cream cheesy texture. Because of my FODMAP diet, I try to avoid cream cheese, so I have been experimenting to get the the consistency of a cheesecake made from cashews correct. The flavour just wasn’t what I wanted and tasted quite bland the first time round and I was getting frustrated having wasted a…

{GF, DF, Veg} Strawberry Fruit Rolls

Fruit Rolls remind me of my childhood, when my dad would go to Fruit and Veg City and stock up on the Banana and Guava variants for us. I remember watching Cartoon Network with my brothers and sisters and peeling back the fruit roll, then slowly tearing off piece by piece, trying to make the roll up last as long as possible. As I grew older I started to dislike anythingh guava flavoured, so I thought it might be a good time to figure out how to make a roll up in a different flavour. I watched a few videos online and it seems the idea is simple – all…

    {Spice it Up} What’s #BetterThanSalt?

Growing up as kids, we all ate Aromat. On chips. On Popcorn, on eggs. It’s that yellow spice that makes food taste nice. But as you get older you realise that you have to be more careful about what you eat and Aromat has had to move with the times. With no MSG, GMOs, artificial ingredients, preservatives or colourants and 40% less salt, Aromat Naturally Tasty has relaunched as a healthier seasoning option. Last week I attended the most awesome launch at PnP’s Good Food Studio, for the new Aromat – hosted by Chef Nti. She really MADE the event for me – she is such a motivating person to…

{Vegetarian} Easy, Budget Friendly Basil Pesto

Pesto, from the Italian word pestare – to pound, is made by crushing several ingredients together. Basil Pesto, as the name suggests, uses Basil – my absolute favourite herb. These days, people just blitz pesto ingredients together in a food processor – but I prefer the taste of a pesto that’s been chopped by hand. It will take longer to make, but the results are worth it. It’s also a good go-to recipe if you don’t own a food processor, but still want to create this flavorful herb sauce. Another tweak I have made on the recipe is to use cashew nuts instead of pine. The reason being – Pine…

    {Vegan & GF} Super Green Potato Salad

Here’s my recipe for a Super Green Potato Salad without the traditional Mayonnaise. Mayonnaise is delicious – but also super-super fattening because it’s loaded with hidden saturated fats, sugars and gluten and is High on the FODMAP chart. It is hard to give up Potato Salad because it’s so DELICIOUS, but what about using avocado instead of Mayo? Vegan’s have been doing it forever! Here’s a recipe for my simple Super Green Potato Salad, which uses creamy avocado as a dressing and Lemon Avocado Oil to emulsify.  It’s also got some other ‘hidden’ green nutrition – pumpkin seeds and spinach. Let me know if you decide to make this version!   Serves 2 Ingredients: ·…

{Dairy & Gluten Free} Chocolate Tarts & THAT Wedding Cake

Happy Monday Guys and I am kicking of the week with these Gluten and Dairy Free Chocolate Tarts. On Saturday after watching the Royal Wedding, I was feeling inspired and decided to bake a tart – one that was friendly on the tummy, but still delicious and this is how it turned out. Royal Wedding Synopsis OK but before we get into that – lets also pause to take a moment to discuss how amazing Meghan looked – her make-up, understated simple yet beautiful dress and that veil. The diversity of people at her wedding, how HOT her second Stella McCartney dress was and how hilarious it was to watch…

    {Gluten Free} 4-Seed Parmesan Crackers & homemade Hummus

Today I wanted to share a recipe that Shaun’s mom passed on to me – 4-Seed Parmesan Crackers. These are great to make in advance and keep in an airtight container, and they stay fresh for two to three weeks, so you will have a decent amount to snack on. And considering most of these crackers cost a fortune at the shops, this recipe is one I am sure to hold on to! These 4-Seed Parmesan Crackers are sugar, gluten and dairy free. I am also sharing my recipe for FODMAP friendly Hummus, which doesn’t contain any garlic. (Garlic is HIGH Fodmap and not good for your tummy – also I think…

Some people call it Pak Choi and some Bok Choy and too be honest I am not entirely sure which is correct, but let me tell you something – I love to eat it. This recipe is a firm favourite at parties and lunches and the reason I love it is because its rich and chocolately and best of all – it contains NO dairy. It uses Avo’s.
