    Protein Berry Bomb Smoothie

If you follow me on Instagram, you know that I have been doing the #f45challenge so I thought I would share some of the things I have been eating – one being this Protein Berry Bomb Smoothie – my go-to smoothie in the mornings. I enjoy smoothies because I can hide so much protein in my morning shake, including my favourite collagen. Here’s the recipe for this shake that serves 2 people & contains around 18g protein per serving depending on what protein powder you use. Enjoy, Cat This smoothie has frozen mixed berries, collagen, vegan protein powder, peanut butter, almond milk, lemon juice and maple syrup.

Coconut Milk Vanilla Berry Panna Cotta

Here’s my recipe for a Coconut Milk Vanilla Berry Panna Cotta that’s dairy-free and refined sugar-free. This Coconut Milk Vanilla Berry Panna Cotta has a good jiggle – as panna cotta should. It is topped with a mixed berry compote for added freshness, but you can also just serve with fresh berries. Top Tips: I don’t recommend almond milk for this recipe, you need thicker milk – which is why I suggest coconut. Make sure to bloom your gelatine first before you warm up the coconut milk in the saucepan. The Berry Layer The berry compote layer is very simple – I cooked some strawberries, blueberries, sugar (or maple can be…

Creamy Vegan Chocolate Mousse with Avo

This Creamy Vegan Chocolate Mousse with Avo is a firm favourite at parties and lunches. It’s rich, pillowy and chocolatey and best of all – it is VEGAN! It uses Avocados instead of eggs. Yup! When combined with some cocoa powder and a good quality dark chocolate (AGAIN – You need to buy chocolate from The Kate Tin) – you’ll never guess there’s avocado in there at all. The Process is simple To make this mousse, you blend avo, coconut cream, maple syrup, vanilla extract and cocoa. You then add melted dark chocolate and blend again and viola – creamy, vegan mousse. Chill in the fridge for a min of…

    Collagen and Carob Oats

Here’s a recipe for my Collagen and Carob Oats. Oats have a bad rep. Maybe its because they are a carb, that they are seen as the enemy? Or maybe its because you think of being forced fed lumpy porridge as a kid? Whatever the reason may be, I plan to make Oats sexy again. Oats are a whole-grain food and are rich in fibre, manganese, the B vitamins thiamin and riboflavin, vitamin E and protein. They’re also low in sodium and fat and free of sugar, cholesterol and saturated fats. So stick around for a few Oat inspired recipes from me! What is Carob? Organic Carob powder is low…

    3 Layered Vegan Blueberry Cheesecake

A recipe for a 3 Layered Vegan Blueberry Cheesecake, with creamy cashew layers and a coconut and almond gluten-free base.  Did you know that you can make a vegan cheesecake with soaked and blended cashews? Once soaked overnight and then blended in a food processor, with coconut cream, maple syrup and lemon juice, the cashews become soft and creamy – just like cheese! The base is made from a combo of coconut and almond flour, maple syrup and coconut oil, which is baked beforehand.   3 Layered Vegan Blueberry Cheesecake To make this Cheesecake, you will need the following ingredients: Cashews Lemons Blueberries Coconut Flour Almond Flour Coconut Oil Maple Syrup…
