    Gluten Free Oreo Cheesecake

Stop the Press, I made a Gluten Free Oreo Cheesecake using these Woolworths GF Sandwich Cookies which I personally feel are better than Oreos! They have a thick vanilla bean center which is utterly delicious and a crisp choc cookie. Have you tried them yet? Here’s how to make this Gluten Free Oreo Cheesecake. I used much less sugar than usual Cheesecake recipes as I really don’t like super sweet desserts. This cake is DEFINITELY not low in calories though, so don’t let the gluten free, low sugar description confuse you. Cream Cheese must be full fat, don’t even bother with low fat puuulease. Here we go: GLUTEN FREE OREO…

    Low FODMAP Hummus

Here’s my recipe for creamy Low FODMAP Hummus, the best dip for veggies, chips, and crackers that won’t bother your IBS. Chickpeas are high in oligosaccharides, however the process of canning them reduces this level enabling those with IBS to have them in small amounts. Monash currently advise a maximum of 1/2 as a portion. So, like everything that tastes good – eat in moderation! Things to keep in mind: My hummus limit is max 1/4 cup per sitting Make sure to use canned chickpeas – I used Saikav chickpeas here. Leave out the garlic to avoid the bloat Top with Paprika and fresh herbs Enjoy making this delicious hummus!…

    Gluten Free Cinnabuns with Yeast

A recipe for Gluten Free Cinnabuns with yeast. These cinnabuns are soft, spicy and sweet and topped with a cream cheese icing.  This recipe took three tries to get right, the first time my yeast had expired and the buns didn’t rise and the second time I forgot to add baking powder! Third time is a charm! NB notes: Warm up your milk, but don’t let it get too hot or it will kill your yeast. Don’t use oil in place of butter, you will get better results with butter, promise! Let your dough rise in a warm place – don’t skip this step, it wont rise as much as…

    Rosé and Blueberry Ice Lollies

Sharing something a little moodier on the blog today– Rosé and Blueberry Ice Lollies lollies. A refreshing palate cleanser to serve before a valentines dinner, or whenever! These ice lollies are made with frozen blueberries, rose, lemon juice and a tiny bit of sweetness.  You will need a good quality rose, (I used this one) plus an lolly / popsicle mould and sticks. Very refreshing to serve on a hot day at the pool, but they melt fast because of the wine, so don’t eat too slowly. ENJOY! Crunchy Gluten Free Shortbread

Here’s my recipe for Crunchy Gluten Free Shortbread, that is so good you won’t believe it is actually gluten free! It is also egg-free and contains 6 ingredients – butter, gluten free flour, almond flour, vanilla essence, caster sugar and a dusting of icing sugar.  Store-bought shortbread from a holiday cookie tin is nice, but homemade is even better, especially when it can be made gluten free. These are crunchy, moreish and absolutely perfect for dipping in tea or hot chocolate. Making the Crunchy Gluten Free Shortbread This is a one-bowl recipe so there is very little fuss. Simply add the room temp butter, Woolworths Gluten free flour,  almond flour,…
