Guilt-free Blackberry Oatmeal Parfait

Hello to today’s recipe: Guilt-free Blackberry Oatmeal Parfait, Vanilla Chia Oats, layered between fresh Blackberries, yoghurt and Blackberry Compote.

For Sautéed Blackberries

  • 1/2 cup blackberries fresh
  • 1 tbsp lemon juice fresh
  • 1 tbsp maple syrup organic
  • 1 tbsp water

For the Oats

  • 1 cup oats gluten free
  • 1 cup water
  • 1 tbsp maple syrup organic
  • 1 tbsp chia seeds
  • ¼ almond milk or preferred milk
  • 1 tsp vanilla extract

Other toppings

  • ½ cup coconut yoghurt
  • ¼ cup fresh blackberries


  • In a medium saucepan over low heat, combine blackberries, lemon juice, and maple syrup. Smoosh blackberries slightly with a fork to break them down. Cook, stirring occasionally until berries soften and liquid evaporates leaving just a bit of juice behind, about 10 – 15 minutes. Allow to cool to room temperature before assembling.
  • In a saucepan, over medium heat, cook the oats in the hot water until soft. Remove from heat and add chia seeds, almond milk, maple and vanilla extract
  • Place blackberry compote in the bottom of the jar, followed by oats, then coconut yoghurt (optional) then berries
