In a medium saucepan over low heat, combine blackberries, lemon juice, and maple syrup. Smoosh blackberries slightly with a fork to break them down. Cook, stirring occasionally until berries soften and liquid evaporates leaving just a bit of juice behind, about 10 – 15 minutes. Allow to cool to room temperature before assembling.
In a saucepan, over medium heat, cook the oats in the hot water until soft. Remove from heat and add chia seeds, almond milk, maple and vanilla extract
Place blackberry compote in the bottom of the jar, followed by oats, then coconut yoghurt (optional) then berries
