Mix flour, egg, sweetcorn and seasoning together until well combined
On a medium heat, heat up a pan with a little bit of coconut oil
Place a spoonful of the batter per fritter into the hot pan, flattening the patties slightly with a spoon, and spacing them apart
Cook the fritters for 3 minutes then flip them on the other side and continue cooking them an additional 2 - 3 minutes until they’re crispy and golden brown.
Transfer the fritters, onto a plate lined with paper towel to absorb the oil, then serve with sweet chilli and mayo
