Easy Sweetcorn Fritters

Ingredients

  • 1 cup Rice or Cake Flour
  • 1 can Creamed Sweetcorn
  • 1 egg
  • 1tsp salt
  • 1/2 tsp cracked pepper
  • 1 tsp mixed herbs
  • 1/2 tsp chilli flakes
  • Any other Herbs or Spices, chopped sring onion optional
  • coconut oil for frying
  • Sweet Chilli Sauce & Mayo for serving

Instructions

  • Mix flour, egg, sweetcorn and seasoning together until well combined
  • On a medium heat, heat up a pan with a little bit of coconut oil
  • Place a spoonful of the batter per fritter into the hot pan, flattening the patties slightly with a spoon, and spacing them apart
  • Cook the fritters for 3 minutes then flip them on the other side and continue cooking them an additional 2 - 3 minutes until they’re crispy and golden brown.
  • Transfer the fritters, onto a plate lined with paper towel to absorb the oil, then serve with sweet chilli and mayo

Notes

Flour: You can use cake flour or rice flour 
Sweetcorn: Use Creamed Sweetcorn, nit just corn in a can 
Flavour: You can add chilli / spring onions etc for more punch
