Here is my recipe for Sweet and Sour Tofu dinner – perfect for #MeatFreeMonday and it is Vegan & Gluten free too. Trust me it is DELICIOUS 😍

Ingredients
1400g Firm Tofu Block
1/3cupMaizenacornflour
1tspsalt
1tspcoriander
1tsppaprika
Oil for frying
½cupSweet & Sour Sauce
Instructions
Remove tofu from plastic and allow to drain for 15 minutes on a clean kitchen towel (with another clean Kitchen Towel and pan placed on top of the tofu)
Slice the block of tofu into four slices and then those slices into three of four chunks. Basically cut into cubes 😊
Place the tofu chunks into a bowl with the cornflour, salt, coriander and paprika. Toss well so tofu is fully coated in the flour
Heat a thin layer of coconut or sunflower oil in a pan on medium-high heat. Fry tofu for around 12- 15 minutes, flipping until golden brown.
5.Pour over the sauce and heat through for a minute
