Preheat the oven to 180C and line a baking tray with baking paper
Mix all the cookie ingredients together in a bowl until well combined and if too thick add a few drops of water
Scoop out a teaspoon of the mixture and roll into a ball using your hand.Place on baking sheet and press out with your fingers or a spoon. Space the cookies evenly on the baking tray with enough space for them to spread during baking
Bake for 12 minutes or until golden brown. Leave to cool on the tray.
To make the chocolate dip melt the chocolate and dip the cooled cookies in. return to the baking tray and sprinkle with crushed peanuts.
Notes
The original recipe called for 100g or coconut sugar but because the Eat Naked Peanut Butter is sweetened with honey, I modified the recipe.
You don't have to add protein powder - but if you do I recommend using either chocolate or vanilla flavour. I used Kauai vegan protein powder.
