Today’s recipe is for these Peanut Butter Protein Cookies, from the Kayla Itsines Cookbook. I modified the recipe slightly as I used Eat Naked Peanut Butter, which contains raw honey for sweetness, so I didn’t need as much sugar as the recipe calls for.

Now for the cookies! Peanut Butter Protein Cookies
These Peanut Butter Cookies are loaded with a sweet and salty peanut butter flavour and are:
- Gluten free
- Refined sugar-free
- Dairy-free (if you omit the chocolate dip)
Adding protein powder is optional, but I added it for two reasons:
- I need to eat more protein snacks after doing SWEAT sessions
- I thought it would help bind the mixture together as the recipe contains no flour
The Peanut Butter
I think I may have found my new favourite Peanut Butter and it’s from Eat Naked.
Each jar contains peanut butter created from locally-harvested peanuts, a swirl of pure, raw African honey and a smattering of salt -with no unnecessary additives.

Kayla Itsines Peanut Butter Cookies
Kayla Itsines Peanut Butter Cookies
Ingredients
Cookies
- 260 g Eat Naked Peanut Butter
- 50 g coconut sugar
- 2 scoops vanilla protein powder vegan
- 1/2 tsp vanilla essence
- 2 large eggs
Chocolate Dip
- 100 g Dark chocolate
- crushed salted peanuts
Instructions
- Preheat the oven to 180C and line a baking tray with baking paper
- Mix all the cookie ingredients together in a bowl until well combined and if too thick add a few drops of water
- Scoop out a teaspoon of the mixture and roll into a ball using your hand.Place on baking sheet and press out with your fingers or a spoon. Space the cookies evenly on the baking tray with enough space for them to spread during baking
- Bake for 12 minutes or until golden brown. Leave to cool on the tray.
- To make the chocolate dip melt the chocolate and dip the cooled cookies in. return to the baking tray and sprinkle with crushed peanuts.
Notes
- The original recipe called for 100g or coconut sugar but because the Eat Naked Peanut Butter is sweetened with honey, I modified the recipe.
- You don't have to add protein powder - but if you do I recommend using either chocolate or vanilla flavour. I used Kauai vegan protein powder.
