Three Layered Peanut Butter and Jelly Chia

Ingredients

For Chia Layer

  • 2 tbsp chia seeds
  • 10 tbsp almond milk
  • 1 tbsp maple syrup
  • 1/2 tsp vanilla extract

For Jam Layer

  • 5 strawberries
  • 1 tsp fresh lemon juice
  • 1/2 tsp agar agar
  • 1 tbsp water

Peanut Butter Layer

  • 2 tbsp peanut butter
  • 1/2 tsp coconut oil

Instructions

Jelly Layer

  • Chop strawberries
  • In a saucepan over medium heat, cook strawberries with water, lemon juice and agar-agar until soft (around minutes)
  • Add to a jar or cup and set in fridge for at least a half hour. It wont go as hard as jelly.

Chia Layer

  • Mix chia, almond milk, vanilla essense and vanilla for at least 2 minutes
  • Set in fridge for one hour and then pour over the jelly layer. Set these two layers overnight.

Peanut Butter Layer

  • Melt coconut oil with peanut butter in the microwave for 30 seconds.
  • Stir and pour over the chia pudding. Top with strawberries if desired.
