Three Layered Peanut Butter and Jelly Chia

Nothing better than a PB&J sarmie, so I took the flavours of peanut butter and jam (jelly) and made a three layered Peanut Butter and Jelly Chia pudding.

This Three Layered Peanut Butter and Jelly Chia pudding contains the following hero ingredients: sugar-free peanut butter, chia seeds, almond milk, vanilla essence, almond milk, agar-agar, maple syrup and fresh strawberries.

How to make the Jelly Layer

First, you will need about 5 strawberries, and if you can get your hands on the Woolworths Flavourburst Strawberries – all the better. 

Chop and then slowly simmer the strawberries in a saucepan with water, agar and a squeeze of lemon juice.

Pour into the glass to set in the fridge.

To make the Chia Layer

Mix the chia seeds with almond milk, vanilla essence and maple syrup.

An hour later, pour the chia seed mix over the jelly.

To make the Peanut Butter Layer

Melt coconut oil and peanut butter and pour over the set chia the next morning and it’s ready to be served.

Top with more strawberries if desired.

Equipment

  • bowl

Ingredients

For Chia Layer

  • 2 tbsp chia seeds
  • 10 tbsp almond milk
  • 1 tbsp maple syrup
  • 1/2 tsp vanilla extract

For Jam Layer

  • 5 strawberries
  • 1 tsp fresh lemon juice
  • 1/2 tsp agar agar
  • 1 tbsp water

Peanut Butter Layer

  • 2 tbsp peanut butter
  • 1/2 tsp coconut oil

Instructions

Jelly Layer

  • Chop strawberries
  • In a saucepan over medium heat, cook strawberries with water, lemon juice and agar-agar until soft (around minutes)
  • Add to a jar or cup and set in fridge for at least a half hour. It wont go as hard as jelly.

Chia Layer

  • Mix chia, almond milk, vanilla essense and vanilla for at least 2 minutes
  • Set in fridge for one hour and then pour over the jelly layer. Set these two layers overnight.

Peanut Butter Layer

  • Melt coconut oil with peanut butter in the microwave for 30 seconds.
  • Stir and pour over the chia pudding. Top with strawberries if desired.
