It is day 2 of my 24 Days of Christmas and today’s recipe is for these bright, crunchy and colourful Outcast Beetroot Burger Wraps. These wraps are perfect for a quick lunch before a Christmas Dinner, and are also a great way to use up leftover salad on Boxing Day.

Catering for Plant-Based Diets this Christmas
Vegans and vegetarians often get the short end of the stick when it comes to the festive season. While there may be a couple of decent frozen ‘meat’ and ‘burger’ options that are plant-based, let’s face it: Frozen pre-packaged foods are never going to be as good as fresh food prepared at home with quality ingredients.
The Outcast Burger Mix

What I like about Outcast is that the flavour of the burger mix is locked in, and only activated when you add hot water.
Their new whole-food activated burger mix contains beetroot, lentils, chickpeas, herbs and spices and obviously no fillers or junk. The beetroot gives the burger patties their red ‘meat’ look, however, it does not impart a raw beetroot taste into the patties, so do not be alarmed.
I made these Beetroot Burger Wraps for the family and they all commented how moist (sorry had to use that word), flavourful and filling they were.
Outcast Beetroot Burger Wraps
Once the burger patties are cooked, I started making the coleslaw, which I then placed on top of a Beetroot Wrap. I added sliced Rosa Tomatoes, basil and pomegranate seeds. I sliced the burger patties into quarters and the wrap was complete.

Outcast Beetroot Burger Wraps
Ingredients
- 1 box Outcast Burger Mix + Oil as per box instructions
- 6 Beetroot Wraps Woolworths
- 1 cup Rosa Tomatoes quartered
- 1 cup basil shredded
- ½ cup pomegranate seeds
- 2 cups purple cabbage shredded
- ¼ cup Dairy Free Mayonnaise B Well range
- Salt & Pepper to taste
Instructions
- Start by making your Outcast Burgers as per the instructions on the box.
- Once cooked, slice into quarters and set aside on a paper towel to drain any excess oil.
- Make your coleslaw next, combining the grated cabbage, mayo, pomegranate seeds, salt and pepper to taste
- To assemble, place coleslaw into the middle of the beetroot wrap, top with quartered burger patties, tomatoes and shredded basil.
