Today's Super Green Gluten Free Sandwich is what brightened up another boring Monday for me. I love healthy fresh sandwiches, so this recipe ticks all the boxes for me.

Ingredients
- 4 slices good quality Gluten free bread Mine is from Woolworths
- 30 g Fresh Basil
- 1 tbsp. Olive Oil
- 1 tbsp. water
- 1 tbsp. Sunflower Seeds
- Salt and Pepper to taste
- 4 large Mozzarella slices
- 1 handful Watercress
- 1 handful Spinach shredded
- 1 Avo sliced
Instructions
- In a food processor, blitz basil with olive oil, water & sunflower seeds until smooth, but not a smoothie! Season this pesto with salt and pepper.
- Spread pesto over each slice of bread
- Fill each sandwich with layers of sliced cucumber, mozzarella, watercress, spinach and sliced avo.
