Make these Soft FUTURELIFE Peanut Butter Cookies that are gluten-free and protein-packed thanks to the addition of peanut butter and FUTURELIFE SMARTFOOD.
These cookies are super-soft and gooey and best served warm, but you can also keep in an airtight container and eat within 2 – 3 days.
I really enjoyed baking with FUTURELIFE, and I will definitely be using it again in my baking recipes, now that I know it is gluten-free.

What you need to make the Cookies
To make the Soft FUTURELIFE Peanut Butter Cookies, you will need:
- 2 eggs
- 3/4 cup of peanut butter
- 1/2 cup of coconut sugar or sweetener of choice
- 1/2 cup chocolate FUTURELIFE
- 2 tablespoons of cocoa powder
- 1/3 cup of chocolate chips
- vanilla extract
You will also need a baking tray lined with baking paper to make these cookies.

Equipment
- bowl
- baking tray
- measuring cups
Ingredients
- 3/4 cup Peanut Butter
- 1/2 cup coconut sugar or sweetener
- 1/2 cup FUTURELIFE SMARTFOOD CHOCOLATE
- 2 tbsp cocoa powder
- 2 large eggs room temp
- 1 tsp vanilla extract
- handful chocolate chips dark or milk
Instructions
- Preheat oven to 180C and line a baking tray with baking paper
- Add all ingredients to a bowl and mix.
- Depending on how oily your peanut butter is, you may need to add another tbsp of FUTURELIFE is the dough is too wet. If the dough is too dry, add a tbsp of milk. Chill for 15 minutes
- Roll balls of dough, about 1.5 tablespoons of dough each, into balls. Press down into cookies shapes on the baking tray
- Bake for 8-10 minutes and cool for 5 minutes on the baking sheet before devouring! These cookies will go a little harder with time, but are quite soft and best eaten warm
