Today we are going to be creating these Maple Glazed Carrots with Thyme. These are a delicious FODMAP friendly, vegan side dish to add to your christmas lunch table.

Creating a recipe every day hasn’t been a walk in the park. In fact, last week I tried to do a 6 a day but kept making silly mistakes, so I am now doing one or two a day, which has been a little easier. 🤣

Maple Glazed Carrots with Thyme

You can serve these Maple Glazed Carrots with Thyme as a side on Christmas – instead of those frozen carrots that are usually boiled to death!

Maple Glazed Carrots with Thyme
Maple Glazed Carrots with Thyme
Ingredients
- 200 g Baby Rainbow Carrots woolworths
- 1 cup water
- 3 tbsp Olive Oil
- 3 tbsp Maple Syrup
- Salt & Pepper to taste
- 5 Sprigs Fresh Thyme
Instructions
- Wash carrots and boil in a pot over a medium heat for 5 or so minutes until they are soft but still have a crunch 2. Remove from pot and drain 3. In the same pot, heat olive oil, maple syrup and sprigs of thyme for 2 minutes over a medium heat 4. Gently toss in the baby carrots and season with salt and pepper to taste 5. Cook for another five or so minutes in this mixture, making sure carrots are evenly coated with this mixture 6. Serve warm as a side dish
