Sharing something a little moodier on the blog today– Rosé and Blueberry Ice Lollies lollies. A refreshing palate cleanser to serve before a valentines dinner, or whenever! These ice lollies are made with frozen blueberries, rose, lemon juice and a tiny bit of sweetness. You will need a good quality rose, (I used this one) plus an lolly / popsicle mould and sticks. Very refreshing to serve on a hot day at the pool, but they melt fast because of the wine, so don’t eat too slowly. ENJOY! Milk Tart Chia Pudding
Today’s recipe is for my ultimate breakfast / dessert hybrid Milk Tart Chia Pudding. Sweet and Sour Tofu
Here is my recipe for Sweet and Sour Tofu on Rice – perfect for #MeatFreeMonday and it is Vegan & Gluten-free too. Trust me – it is DELICIOUS. The secret to making delicious tofu (in my opinion anyway) is to: 1. Drain your Tofu on a kitchen towel 2. Cook in a delicious sauce 3. Bake or Fry it. All About Tofu I love Tofu and believe it is highly underrated – It is a fantastic source of plant protein and just last month I made this recipe too: Sweet and Salty Baked Tofu This Sweet and Sour version is served over a bed of rice, but you could also…
Protein Berry Bomb Smoothie
If you follow me on Instagram, you know that I have been doing the #f45challenge so I thought I would share some of the things I have been eating – one being this Protein Berry Bomb Smoothie – my go-to smoothie in the mornings. I enjoy smoothies because I can hide so much protein in my morning shake, including my favourite collagen. Here’s the recipe for this shake that serves 2 people & contains around 18g protein per serving depending on what protein powder you use. Enjoy, Cat This smoothie has frozen mixed berries, collagen, vegan protein powder, peanut butter, almond milk, lemon juice and maple syrup.
