Gluten Free Christmas Gingerbread Cookies

Today I am sharing this foolproof recipe to make Gluten Free Christmas Gingerbread Cookies.

These gingerbread cookies are gluten free and contain muscovado sugar and molasses, which give the cookies their deep and dark rich flavour, as well as fragrant spices including cinnamon and ginger.

To decorate, I use a simple mixture of 250g of icing sugar mixed with 5 or so tablespoons of water to make a glace icing.

I then fill a ziplock bag with this icing mixture, cut a tiny hole and pipe my cookies.

This batch of dough will make 20 – 30 cookies, depending on what type of cutter you use.

They taste even better after a few days of being baked and really do smell like Christmas.

Give them as a gift or bake a batch to surprise your guests.

Ingredients

For the gingerbread men

  • ½ cup butter or margarine
  • ½ cup muscovado sugar
  • 1 egg
  • ¼ cup molasses
  • 1 tsp vanilla essence
  • 2 ¼ cup Gluten Free Flour Woolworths
  • 1 tsp cinnamon
  • 2 tsp ground ginger
  • ½ teaspoon baking soda
  • ½ tsp salt

Royal Icing

  • 250 g icing sugar
  • 4 - 5 tsp water

Instructions

For the cookies

  • Cream butter and sugar until light and fluffy
  • Add egg, vanilla and molasses and mix until combined.
  • Now add flour and baking soda. Mix until a dough is formed.
  • Cover dough and refrigerate for an hour.
  • Preheat oven to 190C and line a baking tray with baking paper
  • Roll out the dough on a floured surface (best to use rice flour) and cut out biscuits using a cookie cutter.
    Because the dough is gluten free, it is better to roll out small sections and press down on the dough with your hands before rolling gently with a rolling pin.
  • Bake for 5 – 10 minutes - I sometimes leave for 14 minutes so they are extra crunchy.

For the icing

  • Mix icing sugar and water until smooth and shiny
  • Use a piping bag or a small sandwich bag - pipe your cookies however you would like.
  • Store in an air tight container and keep for a week.
