24 Days of Christmas – Caprese Wreath

Todays recipe for my 24 Days of Christmas challenge is this Festive Caprese Wreath, which is easy to make and only uses five ingredients. (not including salt and pepper 😁) This Caprese Wreath is also a pretty way to decorate your table for Christmas lunch, while enjoying a fresh, healthy side dish too. The best part is probably that it takes only a few minutes to prepare – with no cooking needed. Enjoy this Caprese Ring with some braaied chicken, or as a stand alone starter. Happy Chopping! 24 Days of Christmas – GF Christmas Cupcakes

Jingle Bells! It’s 24 days to Christmas and I am going to try and post a recipe everyday, starting with these Gluten Free Christmas Cupcakes. They are relatively easy to make and are guaranteed to add some festive cheer to your Christmas lunch. ❄ A little back story to this challenge – I woke up on Thursday morning and had this bright idea to create 24 recipes. Only problem, there were a mere two days to go until December… So, I have been flat out – baking and cooking up a storm (with many flops in between, check Instagram stories) and have only managed to complete 12 recipes. I will…

    Visit Cathedral Peak Hotel

Visit Cathedral Peak Hotel, a four-hour drive from Johannesburg, nestled in the Drakensberg mountain range, is the 4-star, family-owned Cathedral Peak Hotel. The backdrop of the Cathedral Peaks and ‘bell’ blow your mind every time you look up.     Three years ago, we stayed at a hotel in the area called Didima – which is also a great place and easier on the pocket. One night, we took the 5 minute drive to Cathedral Peak Hotel for dinner and enjoyed ourselves so much that we promised to go back. So, on my Birthday weekend, I was spoiled and we did just that – and what a beautiful place to celebrate…

{Gluten Free} Chocolate Birthday Cake and 30 things I now know!

Ok as of this moment – I am officially 30 years old, so I made a Chocolate Birthday Cake to celebrate. Before I get to the chocolate cake though, I have to take a moment to acknowledge that this is happening. I am 30. That feels so incredibly strange to type out. “Hello, my name is Cat and I’m 30 years old.” I think it isn’t really the number that scares me, more so the fact that I feel as though I celebrated my 21st just a few years ago. It was Arabian Night themed and the Disney lover inside of me made sure that everybody dressed up.   This party really does…

{Gluten Free & Vegan} Creamy Basil Pesto Spaghetti

Today I am sharing a comfort food recipe for this bowl of Gluten Free and Vegan Creamy Basil Pesto Spaghetti. If there is one herb I absolutely LOVE it is Basil. For one, it is the only herb I can actually keep alive. It is also wonderfully fragrant and versatile and elevates a dish that may otherwise taste too bland. Most importantly, you can make pesto with it. However store bought pesto is expensive because it usually contains pine nuts, (the most expensive nut known to man😅) garlic (which I can’t eat) and other unhealthy additives. A while back I made this healthy, budget friendly homemade pesto using cashews and the…
