Today I am making Dreamy Blueberry and Coconut Chia Pudding, using Blueberry Powder from Chayah Foods and Coconut Yoghurt from Woolies.
This Dreamy Blueberry and Coconut Chia Pudding is going to be your new favourite breakfast!
I have mentioned quite a few times that Chia Pudding is one of my favourite gluten-free snacks and breakfasts, for a few reasons. Just two tablespoons of chia seeds contain 4g of protein and they are also a good source of soluble fibre – which is very soothing to the gut.
Chia Seeds also contain iron and Omega 3’s and have a neutral taste, taking on any flavour you add to them, which means that there really isn’t any reason not to eat these versatile little seeds.
Dreamy Blueberry and Coconut Chia Pudding
For this recipe, I used Alpro Almond Milk, Blueberry Powder, Maple Syrup, Coconut Yoghurt and Fresh Blueberries.
Blueberry Powder is available on Faithful to Nature’s website and is a well-known source of antioxidants like anthocyanins; vitamin C, B complex, E and A, copper, selenium, manganese, zinc, dietary fibre, iron.
If you don’t have blueberry powder, you can omit and swop out for tablespoon of blueberry jam or syrup.
Health benefits of Chia Seeds
I eat a lot of chia seed pudding because they are an excellent protein source — especially for people like me who eat little to no animal products.
They are high in quality protein – in fact much higher than most plant foods. 💚 Plus they help you get the fibre you need in the day, without having to eat any grains/wheat.

Dreamy Blueberry and Coconut Chia Pudding
Dreamy Blueberry & Coconut Chia Pudding
Ingredients
- 1/4 cup chia seeds
- 2 tsp blueberry powder or blueberry jam
- 1 cup almond milk
- 1/2 cup coconut yoghurt
- 1 tbsp maple syrup
- 1/3 cup blueberries fresh
Instructions
- In a medium bowl, gently stir together the chia seeds, blueberry powder and almond milk. Cover and set in the refrigerator overnight.
- In the morning, give the chia seed pudding a very good mix, breaking apart any clumps. Scoop into two glasses.
- Top with blueberries and coconut yoghurt.
