    Make a Christmas Coconut Cake

It’s the second last day of my 24 Days of Christmas blog posts and today’s recipe is a naughty but nice one – How-to make a Christmas Coconut Cake. This cake is soft and scrumptious, gluten-free and the frosting is dairy free and uses only coconut cream. Decorate with whatever berries or fruit is in season and top with some edible sparkles for that festive vibe. This Christmas Coconut Cake is the kind of cake that beckons you in every time you walk past it and it’s dead easy to make. Serve as a dessert or slice up and serve with tea and coffee. Happy Baking, Love Cat

{Gluten Free & Vegan} Creamy Basil Pesto Spaghetti

Today I am sharing a comfort food recipe for this bowl of Gluten Free and Vegan Creamy Basil Pesto Spaghetti. If there is one herb I absolutely LOVE it is Basil. For one, it is the only herb I can actually keep alive. It is also wonderfully fragrant and versatile and elevates a dish that may otherwise taste too bland. Most importantly, you can make pesto with it. However store bought pesto is expensive because it usually contains pine nuts, (the most expensive nut known to man😅) garlic (which I can’t eat) and other unhealthy additives. A while back I made this healthy, budget friendly homemade pesto using cashews and the…

They are: Gluten free Refined sugar free Vegan as I didn’t use any eggs or milk. Please tag me if you decide to make these? Love, Cat Ingredients: 1 cup Gluten Free rolled oats 1/3 cup of Gluten…

{GF} Coconut & Almond Vanilla Cake with {DF} Coconut Cream Frosting

MOIST and SOFT and MOREISH – There is NO other way to describe this Coconut and Almond Gluten Free cake. It may not be the most beautiful baked thing you have ever seen, but Shaun and I devoured the entire thing over the weekend. It’s the kind of cake that beckons you in everytime you walk past it and its dead easy to make. Shaun says its the best cake he’s ever tasted, but I think he just really loves cake. But you won’t know until you judge for yourself and let me know your thoughts. The sponge is Gluten Free and the frosting is Dairy Free, being made of coconut…
