    Mango and Black Rice Salad

Here’s a very short and sweet recipe for my Sweet and Salty Mango and Black Rice Salad. I picked some black rice up when visiting The Refillery because it’s the only place I have seen it in Jozi! Black rice is known as ‘forbidden rice’ or ‘emperors rice’ because it used to be reserved for Chinese Royalty. Besides being gluten-free, it is higher in fibre than white rice, Black Rice also boasts 8.5g of protein per 100g! Here’s the recipe for a side salad using this awesome ingredient, or if you are feeling hungry – a salad for one! Gluten-Free Hot Cross Buns

Today’s recipe is for my Gluten-Free Hot Cross Buns – just in time for your Easter baking. There’s nothing better than the aroma of hot cross buns wafting through the air. Especially when they have been toasted and lovingly smothered with butter.  But before we get to that, let me be honest with you – it took three attempts to get this recipe right. It is never easy to cook with gluten-free flours, especially when creating doughs because yeast needs gluten to rise. No gluten = very little rise, meaning very dense crumbly buns. However, there is a way around this problem. A few tweaks to a recipe can help the…

How to Make Maple Tahini Paste

On my last visit to the Zero Waste Store, The Refillery, I filled up one of their brown paper bags with some sesame seeds with one blog post in mind – How to Make Maple Tahini Paste. Now I love tahini – it is almost like peanut butter, but slightly richer and has a mild bitter tang. It is quite a versatile sauce and is used to make hummus and baba ganoush, but it can also be used in some not so obvious ways – such as drizzled over ice cream, salad or a bowl of granola. Tahini is naturally vegan and gluten-free, tastes nutty and is dead simple to…

Kayla Itsines Peanut Butter Protein Cookies

Today’s recipe is for these Peanut Butter Protein Cookies, from the Kayla Itsines Cookbook. I modified the recipe slightly as I used Eat Naked Peanut Butter, which contains raw honey for sweetness, so I didn’t need as much sugar as the recipe calls for. But, before we jump into the recipe, I wanted to take a moment to let you know that it is my blogs 1 year birthday! So to celebrate – I am hosting 7 days of giveaways on Instagram, so make sure you are following me to enter. You can read all about One Year of Le Famished Cat here. Now for the cookies!
